Lamb shanks are a tougher cut, but when cooked properly through slow methods like braising, it becomes incredibly tender and flavourful. The toughness comes from the abundance of connective tissue and fat in the shank, which breaks down during slow cooking. Lamb shanks are often described as having a rich, meaty, and slightly gamey flavor.
