The crème-de-la-crème of beef cuts, the eye fillet, or tenderloin, is the long, lean muscle that runs along the spine and does almost zero work—so it’s naturally melt-in-the-mouth tender with a delicate, fine grain and very little fat or sinew to trim.
Cut off for delivery is 9am Thursdays to ensure delivery on Fridays.
